I bought this to add to my wife's other Henckels knives and it has not disappointed us. This knife more than lives up to what we expect from Henckels as it is well balanced, cuts superbly, and is just very easy to use. It has become one of the most used knives because it's big enough for most stuff, but not so big that you can't use it on the small stuff. The hollow-edge really cuts well, so well that you can really slice stuff thinly with little effort. We are most pleased with this and would very highly recommend it to anyone looking for an outstanding knife.

The hollow edge gives you the ability to cut thin slices of vegetableDesigned for the aspiring hobby chef, the Professional S series provides the excellence expected from Zwilling J.A. This 6-inch utility knife starts with the traditional look of the three-rivet handle and adds a hollow-edged blade that's practically a necessity these days in Asian cooking. The hollows create air pockets that allow thin slices to fall away without sticking, making this knife ideal for slicing cucumbers and sashimi but also sandwiches, fruit, and meat. In short, the utility knife lives up to its name.
