OK, so [...] is a lot to pay for a cheese knife; but if you are buying a really nice present for someone, especially a cheese lover, this is a good choice. Right out of the package, the smooth feel and excellent balance of this knife impressed me. And for the right kind of cheese, in this case the semi-hard cheeses (e.g. Asiago, Jarlesberg, Emmenthaler or Cheddar all work) the performance is very good. The handle is long enough to give you a good purchase to slice effectively, and to make nice slices without the cheese sticking too much. It did not work so well on a very hard piece of aged Pecorino Toscano we had, but then, the Parmesan knife is probably a better choice for a hard cheese like that; I would also imagine that it would not be great bfor soft sheeses either, and again, they have another [...] knife for that too. But I suspect this one has the most uses of the series.

One in a series of Henckels Twin Collection specialty knives that have won prestigious design awards, this knife is precisely engineered to slice and serve medium-hard cheeses such as Emmenthaler and Cheshire. Forged of high-carbon stainless steel, the 5-inch blade has a straight edge to neatly slice a cheese all the way through, and then the blade curves up sharply to become a prong tip for spearing and serving the slice. The knife's most striking feature is its 18/10 stainless-steel handle, which is ergonomically shaped to fit the fingers snugly and has a glowing satin finish. The entire knife, blade and handle, balances beautifully in the hand, lending the impression of a fine instrument. While the knife is dishwasher-safe, it should be hand washed to preserve the edge. --Fred Brack
